Support for multiple Plex instances

For now, a discussion and not a request. This has come up multiple times on discord and really it needs a place where people can give their use cases, etc to help determine what we do.

This need not turn into some stupid conversation about peoples opinions on why someone is requesting it, what they do is their business and the rest of the noise is not necessary.

+1 for adding support for multiple Plex Instances.
My use case is i run 2 plex servers on separate machines. 1 is my main but if that server fails or is offline for maintenance I can then use my backup plex server until my main server is back up and running.
Essentially minimizing plex downtime in the house.
