Re-work docker-compose in cookiecutter and in docs #5

Because docker-compose is now tightly integrated in the test strategy, remove the optional aspect in cookiecutter.

It can be used to demonstrate the package via the example app, and allows us to use the same nox approach locally and in GitHub actions.

Note: Playwright should remain an optional feature.
